Chef Jae Lee has worked for some of the biggest names in the business, including Danny Meyer’s Union Square Hospitality Group, Masaharu Morimoto’s Momosan Ramen & Sake, and Dale Talde’s Rice & Gold, amongst others. Prior to opening Nowon, Jae ran the very successful Korean pop-up, Him (meaning ‘Strength’ in Korean).  Nowon is Jae’s first solo brick and mortar venture.  
 
Born in Nowon, South KoreaJae is also the grandson of a Korean Marine General, and an amateur beatboxer and karaoke rapper.  Nowon is very personal to Jae as a chef because it is representative of his Korean American immigrant journey – he is also no one (“Nowon”), without his culture and roots (and it was truly a family effort to open the restaurant – his dad even made each table by hand!)
